This recipe given to me by the lovely lady at the school gate this morning so I just had to try them to coincide with the current health kick.
Couldn’t believe how easy they were to make. I substituted some of the porridge oats and put in other seeds I had at in the press. (linseeds, pumpkin, pine nuts etc.)
100g gluten free oats
50g dessicated coconut
150g raw peanut butter. Not something we usually have at home so I bought the Biona brand
50g flax seeds
50g dried cranberries
100ml organic maple syrup or honey (choose local if you can)
1 tablesp chia seeds
1 teaspoon vanilla extract
Stir all the dry ingredients together in a bowl just to mix them up.
Add in the maple syrup, vanilla extract and peanut butter. Mix all together, it is sticky and hard to do (I got stuck in and did it with my hands – works them together better).
Leave in the bowl, cover with cling film and place in fridge for half an hour to help them set a little.
When ready use palms of your hands to roll into bite size balls. Place on the base of a tubberware box, cover bottom layer with baking paper and continue to make – i.e. layer in the tubberware box, cover and place in fridge and they’ll be ready for when you need them.
Great for kids lunch box, both of mine liked them. They’re gone off with one each in their lunch boxes today. Whether they’ll come home or not is another thing !
