Was down the village the other day chatting to our lovely post mistress about soup … I’m looking to try something different I say … This is what I came away with it !
Usually when it comes to homemade soup I’m the kinda Mom that throws whatever is around into the pot but because of the coconut milk I followed it nearly to the T ! I wasn’t too sure about cooking with Cocunut milk and I had read somewhere about it separating so I wasn’t talking any chances 😉
2 large Sweet Poratoes
Clove of garlic or 2 ! 😉
1.25 litre Veg Stock
4tb tomato purée
400g can Coconut milk … I used a carton of a coconut milk instead
You can add a child too if you like, I just added a squirt of Chili paste
Peel and slice the sweet potatoes, drizzle with a little olive oil & bake for 20-30 mins until tender.
Meanwhile gently sauté the onion, leek, garlic, Chili paste until tender !
Into a saucepan of the stock add the sweet potato, sautéed veg, tomato purée stirring gently to finish cooking it through. Add the Cocunut milk and blitz to a soup consistency !
